  • 15 oz can tomato sauce
  • 1 piece onion, diced
  • 2 cloves garlic, minced

  • Salt and pepper to taste

Preparation
  1. In a heavy-bottomed cast iron skillet, heat a generous drizzle of olive oil over medium heat until shimmering.
  2. Add the diced onion and minced garlic to the skillet, stirring occasionally, until they turn translucent and fragrant—around 3-4 minutes.
  3. Mix in the ground beef, breaking it up with a wooden spoon. Cook until browned, about 7-10 minutes.
  4. Stir in the chopped bell peppers, cooking for another 5 minutes until they begin to soften.
  5. Pour in the rice, tomato sauce, Italian seasoning, and sprinkle in salt and pepper. Mix well to combine.
  6. Cover the skillet, reduce heat to low, and allow to simmer for about 20 minutes, or until the rice has absorbed the liquid and is fluffy.
  7. Serve warm for a comforting meal.

Notes

Consider adding chopped spinach or zucchini to boost vitamins without altering flavor. Avoid microwaving leftovers to maintain texture.
