Pasta Essentials
  • 8 oz 8 oz pasta (spaghetti or penne) Choose your favorite type of pasta.
  • 2 cups 2 cups cherry tomatoes, halved Seek organic varieties for sweeter flavor.
  • 2 cups 2 cups fresh basil leaves, chopped Fresh basil enhances flavor.
  • 3 cloves 3 cloves garlic, minced Minced garlic adds aroma.
  • 2 tablespoons 2 tablespoons olive oil Use extra virgin for best taste.
  • to taste Salt and pepper to taste Season generously.
  • as needed Parmesan cheese (for serving, optional) Grated, for serving.

Method

Cooking
  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, allowing the steam to escape.
  2. In a heavy-bottomed cast iron skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, about 1-2 minutes, ensuring it doesn’t brown.
  3. Toss in the halved cherry tomatoes, cooking until they soften and their skins begin to blister, around 3-4 minutes.
  4. Stir in the cooked pasta and chopped basil, mixing well to ensure everything is coated in the garlicky, oily goodness.
  5. Generously season with salt and black pepper to taste, tasting as you go.
  6. Plate your beautiful Tomato Basil Pasta, adding a sprinkle of Parmesan cheese for a touch of indulgence if desired.

Notes

For a healthier twist, consider adding spinach or grilled chicken for added nutrition. Serve with a crisp white wine or sparkling water.
