Main Ingredients
  • 1 cup Uncooked long grain white rice or jasmine rice Choose a high-quality brand for the best flavor.
Optional Ingredients
  • 2 leaves Makrut lime leaves Look for fresh leaves if available, but dried will work as well.
  • 1 stalk Lemongrass, finely sliced Adds a zesty flavor that pairs beautifully with toasted rice powder.
  • 1 piece Galangal, fresh Similar to ginger, but with a more citrusy flavor; fresh is best.

Method
 

Toast the Rice
  1. In a dry skillet over high heat, add your uncooked rice. Stir constantly for about 10-12 minutes, or until the grains turn a deep brown color.
  2. If using makrut lime leaves, add them whole to the rice during toasting. Remove them once they become crisp.
  3. In the last 2-3 minutes of toasting, add thinly sliced lemongrass and galangal to infuse flavors.
Grind and Store
  1. Transfer the toasted rice to a coffee grinder or use a mortar and pestle. Grind until it reaches a fine sand texture.
  2. Store your toasted rice powder in a tightly sealed container at room temperature for up to 1 week or in the refrigerator for longer freshness.

Notes

For longer shelf life, consider storing in an airtight glass jar and refrigerate to prevent rancidity. Make-ahead options are available by preparing larger batches. Avoid rushing the toasting process for the best flavor.
