Cooking Preparation
  1. Begin by heating olive oil in a heavy-bottomed cast iron skillet over medium heat until it shimmers.
  2. Generously season chicken breasts with salt, pepper, and oregano, ensuring each side is coated.
  3. Add the seasoned chicken to the skillet, cooking for 5-7 minutes on each side until golden brown and fully cooked. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  4. Remove chicken from the skillet and let it rest for 5 minutes, allowing juices to redistribute.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Stir in cherry tomatoes, cucumber, and red onion, sautéing for about 3-4 minutes until softened but still crisp.
  7. Slice the chicken and return it to the skillet. Drizzle with lemon juice and toss to combine.
  8. Top with crumbled feta cheese and fresh parsley before serving.
