Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
Cooking
  1. In a heavy-bottomed skillet, brown the ground beef with diced onion and minced garlic over medium heat for 6-8 minutes.
  2. Stir in the cooked rice, shredded cheese, Italian seasoning, and diced tomatoes (if using). Season with salt and pepper to taste.
  3. Stuff each bell pepper with the beef mixture, packing it well.
  4. Arrange the stuffed peppers in a baking dish and bake for 30-35 minutes or until the peppers are tender.
Serving
  1. Serve hot, optionally garnished with fresh herbs.

Notes

For a healthier option, substitute ground turkey or chicken for the beef. Consider adding finely chopped vegetables to the filling for extra nutrition.
