Preparation
  1. Heat 2 tablespoons of olive oil in a heavy-bottomed cast iron skillet over medium heat until shimmering.
  2. Add 1 pound of Italian sausage and cook until browned on all sides (about 8–10 minutes).
  3. Remove the sausage from the skillet and set it aside.
  4. In the same skillet, add 2-3 sliced bell peppers and 3 cloves of minced garlic; sauté until the peppers are softened and fragrant (about 5 minutes).
Cooking
  1. Return the sausage to the skillet, integrating its flavor with the vegetables.
  2. Pour in ½ cup of white wine, scraping up any browned bits from the bottom of the pan.
  3. Add salt, black pepper, and Italian herbs to taste; simmer for 10 minutes until everything is cooked through and the sauce thickens.
  4. Serve warm, garnished with fresh herbs if desired.

Notes

For a healthier version, swap Italian sausage for chicken or turkey sausage and add leafy greens like spinach. This dish can be prepared ahead of time to enhance flavors.
