Preparation
  1. In a large, heavy-bottomed cast iron skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.

  3. Carefully remove sausages and set them aside on a plate.
  4. In the same skillet, add 3 sliced bell peppers (red, green, yellow) and 3 minced garlic cloves; sauté until softened and fragrant, about 5 minutes.
  5. Pour in ½ cup of dry white wine, scraping up any brown bits. Season with ½ teaspoon salt, ½ teaspoon black pepper, and 1 teaspoon Italian seasoning.
  6. Return the sausages to the pan and let them simmer in the sauce for another 10-15 minutes.
  7. Serve hot with crusty bread or over your favorite pasta.

Notes

Serve in a rustic bowl, garnished with fresh basil or parsley. Pair it with a rich red wine like Chianti and enjoy with crusty Italian bread to soak up the juices.
