  • 1 clove garlic, grated or minced
  • 1 large egg
  • 1/3 cup panko breadcrumbs Helps bind the mixture.
  • 2 tablespoons plain Greek yogurt Keeps the patties juicy.
  • 1 teaspoon Dijon mustard (optional) Adds extra flavor.

Method
 

Preparation
  1. In a bowl, mix all ingredients gently. Avoid overworking the mixture to prevent dense patties.
  2. Wet your hands and shape the mixture into 4 to 6 patties, making a small dent in the center of each for even cooking.
Cooking
  1. Heat a skillet over medium to medium-high heat and add a thin layer of olive oil.
  2. Place the patties in the skillet, ensuring not to crowd them. Cook for about 4 to 5 minutes per side or until golden brown.
  3. Use a thermometer to ensure they are cooked through; chicken is done at 165°F in the center.
  4. For extra browning, let them sit in the pan without moving for the first couple of minutes.
Serving
  1. Serve the patties over salad, in pita with cucumbers, or alongside roasted potatoes or cauliflower mash.

Notes

Chilling the mixture for 10-15 minutes helps patties hold their shape. Adjust seasoning to taste with a test patty before cooking the full batch.
