- In another bowl, combine the ground pork, finely chopped cabbage, green onions, soy sauce, sesame oil, minced ginger, salt, and pepper. Mix until fully integrated.
Assembly
- Roll out the rested dough on a floured surface until paper thin. Cut into circles about 3 inches in diameter.
- Place a spoonful of the filling in the center of each circle and fold the dough over to create a half-moon shape, pinching the edges to seal.
Cooking
- Heat oil in a heavy-bottomed cast iron skillet over medium heat. Add potstickers in a single layer, frying until the bottoms are golden brown (about 3-4 minutes).
- Add a splash of water to the pan, cover promptly, and steam the potstickers for about 5 minutes until fully cooked.
Serving
- Enjoy your potstickers hot, dipped in your customized blend of soy sauce, vinegar, and chili oil.
