Preparation
- In a large, heavy-bottomed cast iron skillet, heat 3 tablespoons of olive oil over medium-high heat.
- While the oil is heating, season the chicken breasts with salt and pepper on both sides.
Cooking
- Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the lemon juice and zest, and sprinkle in the dried oregano. Stir well to combine.
- Return the chicken to the skillet, coating it with the lemon-garlic sauce, and let it cook for an additional 2 minutes.
- Serve hot, garnished with fresh chopped parsley over a bed of rice, pasta, or sautéed vegetables.
Notes
To enhance the nutritional value, consider adding steamed broccoli or asparagus. Serve with quinoa instead of rice for added protein.
