  • 1 lb ground beef Choose 80/20 beef for balanced flavor and moisture.
  • 1 cup rice Preferably long-grain.
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese Cheddar or your favorite.
  • 1 onion, diced Yellow or white.
  • 2 cups beef broth
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Optional: chopped parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large, heavy-bottomed cast iron skillet, brown the ground beef over medium heat, breaking it apart as you go.
  3. Add the diced onion into the mixture and cook until the onion is translucent, releasing their sweet flavors.
  4. Stir in the rice, beef broth, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Bring to a simmer, allowing the flavors to meld together.
  5. Transfer the mixture to a greased baking dish, spreading it evenly.
  6. Top with shredded cheese, creating a generous layer.
Baking
  1. Cover with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  3. Garnish with chopped parsley if desired. Serve warm and enjoy!

Notes

Consider adding frozen or fresh vegetables such as peas, carrots, or bell peppers for extra nutrients. For a healthier option, use whole grains like brown rice or quinoa.
