  • 8 oz Pasta Any shape
  • 1 cup Cherry Tomatoes, halved
  • 1 Cucumber, diced
  • 1 Bell Pepper, diced
  • 1/2 Red Onion, chopped
  • 1/2 cup Feta Cheese, crumbled Opt for imported Greek feta for an authentic flavor.
  • 1/4 cup Black Olives, sliced
  • 1/4 cup Olive Oil Use extra virgin for best flavor.
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Method
 

Preparation
  1. Boil a large pot of water and add a generous pinch of salt. Cook your pasta according to the package instructions until al dente. Drain and let cool.
  2. In a spacious mixing bowl, combine the cooled pasta, cherry tomatoes, diced cucumber, bell pepper, chopped red onion, crumbled feta cheese, and sliced olives.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until the mixture emulsifies.
  4. Pour the dressing over the pasta salad, tossing gently to ensure everything is well-coated.
  5. Serve chilled or at room temperature.

Notes

For a healthier twist, add chickpeas for protein, swap to whole wheat pasta, or include seeds. Can be made ahead of time; it tastes better the next day.
