Easy Oven Ribs and Homemade BBQ Sauce

Ingredients
  

For the Seasoning Rub
  • 2 Tablespoon paprika Use fresh quality paprika.
  • 1 Tablespoon plus 1 teaspoon cumin seed Freshly ground enhances flavor.
  • 1 Tablespoon coriander seeds Ground for better integration.
  • 2 teaspoon cinnamon Adjust to taste.
  • 2 teaspoon dried oregano
  • 2 teaspoon black pepper
  • ½ to 1 teaspoon chili powder or cayenne pepper Adjust for spice preference.
  • ¾ teaspoon salt
For the Ribs
  • 1 rack pork back ribs or spare ribs Feel free to use other proteins.
  • 1 ½ to 2 cups low sodium stock
For the BBQ Sauce
  • 2 cloves garlic, minced Enhances flavor.
  • ¼ cup diced onions
  • ¼ teaspoon cumin seeds
  • ½ teaspoon coriander seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon paprika
  • ½ cup ketchup
  • 3 Tablespoon dark brown sugar
  • 2 Tablespoon tamarind juice Can substitute with apple cider vinegar.
  • 1 ½ Tablespoon rice vinegar
  • 2 Tablespoon plus 2 teaspoon soy sauce Ensure gluten-free if necessary.
  • 2 Tablespoon sweet soy sauce (Kecap Manis)
  • 2 teaspoon Worcestershire sauce

Method
 

Preparation
  1. Combine all dry spices for the seasoning rub in a coffee grinder and grind until fine.
  2. Cut the pork ribs in half and place them in a deep baking pan. Generously sprinkle the spice mix over the ribs and let them marinate for at least a couple of hours or preferably overnight.
Cooking
  1. Preheat your oven to 325°F (163°C). Pour low sodium stock into the bottom of the pan, cover tightly with foil, and bake for 2.5 hours, checking for tenderness after 1 hour and 45 minutes.
  2. Meanwhile, make the BBQ sauce by sautéing diced onions and minced garlic in a splash of oil over medium heat until soft, then add spices and toast for 30 seconds.
  3. Add remaining BBQ sauce ingredients, simmer on low for 10-15 minutes or until thickened slightly.
Serving
  1. After baking, brush the ribs generously with BBQ sauce and serve with extra sauce on the side.

Notes

Cooked ribs can be stored in the fridge for up to 4 days or frozen for up to 3 months. For a spicy kick, consider adding cayenne pepper.
