Ingredients

Essential Ingredients
  • 8 oz pasta (such as spaghetti or fettuccine)
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • salt & pepper, to taste
  • 1 cup fresh basil leaves
  • 8 oz burrata cheese Choose fresh burrata from a local cheese shop for creaminess.
  • Parmesan cheese, for serving (optional)

Method

Preparation
  1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat until shimmering. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add halved cherry tomatoes to the skillet; cook until softened, about 5-7 minutes. Season with salt and pepper.
  4. Toss the cooked pasta with the tomato mixture and fresh basil until well coated.
  5. Transfer to a serving bowl and gently place the burrata cheese on top, allowing it to melt slightly.
  6. Sprinkle with grated Parmesan cheese if desired. Serve warm and enjoy the experience!

Notes

For added nutrients, consider adding a handful of fresh spinach while sautéing the tomatoes. You can use whole wheat pasta for a healthier option or change the burrata to cashew cheese for a vegan alternative.
