Ingredients

Main ingredients
  • 2 cups Cherry Tomatoes Look for plump, glossy tomatoes for the sweetest flavor—they should smell heavenly!
  • 8 ounces Pasta (such as spaghetti or penne) Choose durum wheat pasta for a better bite.
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • to taste Salt and Pepper
  • for garnish Fresh Basil
  • optional Parmesan Cheese

Method

Cooking Instructions
  1. In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, allowing the steam to escape but leaving some moisture on the pasta to absorb the sauce.
  2. In a large skillet, heat the olive oil over medium heat until shimmering. Add the minced garlic and sauté for about 1 minute until fragrant, taking care not to let it burn.
  3. Toss the cherry tomatoes into the skillet, stirring gently. Cook for about 5-7 minutes until they burst and soften, releasing their delicious juices into the skillet.
  4. Season with salt and pepper to taste; this is where you enhance the flavors of the tomatoes and garlic.
  5. Add the cooked pasta to the skillet, tossing it with the tomato mixture until well-coated and heated through.
  6. Serve warm, adorned with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.

Notes

For a healthier version, consider adding grilled chicken or chickpeas for extra protein. Drizzle with more olive oil for healthy fats. Use gluten-free pasta for a gluten-free option.
